Peanut Butter Chocolate Chip Cookies

I'm always on the search for the best ever chocolate chip cookies.  These are pretty damn close!

Peanut Butter Chocolate Chip Cookies

  • 1/2 cup Earth Balance non-dairy butter
  • 1/2 cup all-natural unsalted peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tablespoons water
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  1. Preheat oven to 375°F.
  2. In a large bowl cream butter, peanut butter and both sugars until smooth.  Beat eggs in one at a time.  Stir in water and vanilla extract.
  3. In a separate bowl combine flour, baking soda and salt.
  4. Slowly mix the dry mixture into the peanut butter mixture.  Fold in chocolate chips.
  5. Spoon teaspoonfuls of batter about 3 inches apart onto a greased baking sheet.
  6. Bake in preheated oven for about 12-15 minutes or until edges are slightly brown.
  7. Let cool on a wire rack for a few minutes and enjoy!

Road Trip

We went on Fiona's first road trip!  My cousin's son was baptized this weekend, so we drove to California to celebrate and all meet each other's babies.  We were so nervous about the drive that we gave ourselves 6 and 1/2 hours for a 3 and 1/2 hour drive!  Once I learned that I can kneel up on my seat, lean over and breast feed without having to stop the car, I knew we were golden.  I realize this sounds a little unsafe, but I was in the backseat and was able to keep my seatbelt on... and we were totally covered... AND we didn't have to stop once on the way there.  Yay!

Hopefully our visit to Evan's family for Hanukkah will be just as smooth.  We've got the feeding thing down, so we'll just have to pray for no diaper explosions.

Just Relaxin'

I want to keep Fiona from watching t.v. for as long as I possibly can, but someone gave us the Your Baby Can Read DVD set before Fiona was born, and I thought we'd check it out today.  I'm sure 3 months is way too young for all that, but it can't hurt, right?  And she seemed to enjoy it for a little while.

It was so incredibly nice Saturday, so we decided to spend the day at beautiful Lake Las Vegas for - dare I say it? - Beerfest.  Evan has gone a couple times before, but I've always missed out for one reason or another.  No, it's not a bunch of frat guys doing keg stands and body shots off of young party girls.  However, Evan, Chad and my dad have done their share of damage at past events...  I've heard the stories.
It was actually really nice to relax by the lake, walk around the shops and have dinner with family and good friends.  

Fiona was SO good.  After the first massive diaper explosion, which left my shirt soiled for the rest of the day, she was a perfect little angel.  She loves to be outdoors.

It has become tradition to spend Halloween at Evan Jr's mom & stepdad's house.  They always have yummy spreads of food and their home is so adorable.  We had a lot of fun hanging out there and, of course, trick-or-treating.
Fiona was a little cranky in her costume, so after a few pictures she was out and relaxed the rest of the night.
I've had this costume idea since before she was born so I was SO excited to finally have the chance to dress her up.  I don't usually like lobster, but I sure do want to eat her up!

Adventures in Dog-Walking

A few weeks after Fiona was born I attempted walking each of my 3 dogs separately while pushing Fiona in her stroller.  You can see pictures here. 
But after struggling with one dog who won't stop pulling, one dog who is too afraid of the stroller to do anything, and one dog who likes to walk leisurely in front of the stroller while I yell through gritted teeth, "Just GO!" - all while praying my baby girl doesn't wake up halfway through the walk forcing me to endure 15 minutes of ear-piercing screams from a hungry baby - I decided that I love my dogs, but perhaps not enough to compromise what little sanity I do have. 
So I ditched that idea and decided to try walking all 3 with baby in her little sling that I love so much.  It's risky, I know.  If she wakes up hungry, we're all screwed.  I have 3 dogs and 0 free hands.  But, seriously this sling is so amazing.  She hardly ever wakes up in it unless I want her to wake up, so it works out great and we're able to go for walks all the time.  
Before I had Fiona people would see me walk 3 dogs and say, "Wow, you've got your hands full", but now I seriously feel like a 3-ring circus.  I guess that's something you get used to being a mom, right?

My Parents' Backyard

It's tough to find a newer home in Las Vegas with a good backyard.  Ours is ok.  We have trees and the dogs can run a bit...on rocks.  But it's still more than many get.  
My parents' yard is like a park compared to ours.  Relaxing back there with a cup of coffee is one of my favorite things ever.  

I think Fiona likes relaxing back there too.
